I love the smell and the taste of a fresh, home-made Banana Bread. I was used to bake it quite often in the last years the, because of lack of time or other priorities, I lost this habit. Now, during the Corona Virus quarantine I re-discovered the pleasure of doing it by myself!
I usually don't follow a diet, but I try as much I can to eat healthy, with less sugar and milk. So, based on the I've created this Banana Bread, which is now part of my daily breakfast during the week or a great snack during a working afternoon.
ALL WHAT YOU NEED: - 3 finely smashed mature bananas - 3 eggs - 125ml coconut milk - 1 teaspoon baking soda - a cup of almond (or coconut) flour - ground almonds - a pinch cinnamon - a pinch of salt
LET'S BAKE IT: 1- Smash the bananas with a fork and preheat the oven (180°) 2- In a bowl mix the 3 eggs, the coconut milk and the smashed bananas 3- Add the baking soda, cinnamon, salt and 4 for spoons of ground almonds to the cup of flour 4- Add slowly the dry mix to the bowl with the eggs, coconut milk and smashed bananas and combine well 5- Pour the dough into a loaf pan covered with baking paper and add on top a bit of ground almonds 6- Bake at 180°for 55 minutes
ENJOY IT, it's without added sugar (the bananas give it by their own), without milk and gluten-free!
